Begin the stay with two nights at the 5-star Merrion Hotel in Dublin, including a fascinating trip to the nearby Guinness Storehouse, where the creation of Guinness all began. Follow this with two nights in County Mayo at the historic Ashford Castle, a 13th-century castle previously owned and inhabited by the Guinness family, recently restored and now recognized as one of the most luxurious hotels in Europe. Guests at the castle will be treated like royalty and are offered a chance to meet with a member of Ashford Castle's current staff whose family was present when the Guinness family lived there.
