Aqua Expeditions Executive Chef Named in World's Best List
Malabar, located in the San Isidro neighborhood of Lima, jumped an unprecedented 25 places from last year's list. Restaurants are judged by a panel of 837 experts, who vote for their favorite restaurants over the last 18 months.

Chef Schiaffino, who has been part of the Aqua Expeditions team from the beginning, offers guests aboard the M/V Aqua and M/V Aria contemporary Peruvian cuisine with native Amazonian produce. In addition to his two successful restaurants and overseeing the cuisine for Aqua Expeditions, Schiaffino is also expanding his empire by launching a new restaurant in Lima called ámaZ, expected to open this summer.

The brainchild of Francesco Galli-Zugaro, Aqua Expeditions is entirely unique to the Peruvian Amazon. Trips cater to discriminating, adventurous travelers and explore the more remote and pristine areas of the Pacaya-Samiria Reserve in the upper Amazon River and its tributaries. M/V Aqua, the flagship vessel, is 140 feet long with 12 spacious and luxurious guest suites. All of the suites are 230 to 240 square feet with large outward-facing picture windows and en-suite sitting areas. Launched in spring 2011, Aqua Expeditions' newest vessel, the M/V Aria, features 16 suites with floor-to-ceiling windows, Jacuzzi, a gym, sundeck, and the same Pedro Miguel Schiaffino-designed menus.
