Bruges Luxury Hotel Opens Fine Dining Restaurant
The luxury boutique Hotel Heritage, located in the heart of the beautifully preserved medieval city of Bruges, has successfully opened Le Mystique, a fine dining restaurant on property.

Featuring a delicate balance of French and Flemish cuisine, the 34-seat restaurant aspires to please the palettes guests. Chef de cuisine Olivier Vandekerckhove has been charged and challenged to create seasonally inspired gourmet presentations made with local ingredients, including Belgian beer and cheeses.

Chef Olivier strives for continuous quality and constantly reinvents his own personal touch to existing recipes. "At Le Mystique, we don't have a set menu," he says. "We have an eclectic menu full of top quality seasonal suggestions which changes often. Our goal is to offer our guests fair portions, and a modern presentation that is prepared with properly balanced ingredients."

Johan and Isabelle Creytens, the owners of the centrally located luxury hotel, fully support Chef Olivier's vision, innovation and creativity. "He wants to bring an honest, qualitative cuisine at an affordable price. We don't feature a chemic cuisine, but a delectable and balanced gourmet experience that is familiar and memorable to our guests."

Le Mystique arrives just shortly after another renovation of the hotel's four luxurious suites, and the creation of an elegant seminar room that accommodates up to 12 people, and the design of the now popular lounge and bar, Le Magnum.

Increasingly concerned about the environment, the 24-room Hotel Heritage is making an effort to become sustainable. At Le Mystique, all waste is sorted, LED lights are commonly used throughout the property, and no cooker hood or energy is used when not necessary. The restaurant intends to work with fully biological products in the near future, as it continues its sustainability efforts, which coincide with the increasing popularity of "eating green."

The award-winning Hotel Heritage is rated with Four Stars in Michelin's Green Guide, is included in Zagat's World's Top Hotels guide, and has received many industry recognitions including the Insider's Select list by Expedia.com in 2007, and the TripAdvisor® Choice Award for Best Luxury Accommodation in 2009.
