Caneel Bay, A Rosewood Resort Introduces Sushi Bar for the New Year
The Sushi Bar, adjacent to the Caneel Beach Bar & Grill, is led by Chef Chance Herbert who welcomes guests with fresh seafood delicacies. Start with appetizers such as warm Edamame sprinkled with truffle salt ($8); Cucumber Salad sprinkled with scallions and sesame seeds ($10); or Seaweed Salad with ponzu ($13). Choose from over a half-dozen rolls including Caterpillar of cucumber, eel and crab topped with avocado and eel sauce ($25); Trunk Bay Roll of avocado, panko shrimp and red bell pepper topped with tuna tataki, ponzu and scallions ($24); and the Honeymoon Roll with cucumber, spicy tuna and seared yellowtail rolled in tempura flakes topped with nori and drizzled in eel sauce, wasabi aioli and paradise aioli ($26).

Sashimi is prepared and served with four pieces per order, including cobia ($14), salmon ($16), mackerel ($16), tuna ($18) and tuna tataki ($18). And nigiri is turned out bedecked on rice with two pieces per order, including smoked fresh water eel ($12), shrimp ($12), mackerel ($12), cobia ($12), salmon ($13), tuna ($14) and wahoo ($14).

Chef Herbert arrived at Caneel Bay from Knoxville, Tennessee, where he found his culinary passion at Nama Sushi Bar and then at Asia Café and Ebi Sushi Bar, the last two of which he helped open. Of German heritage, Chef Herbert dedicates his love and passion for food to his mother, who spent time teaching her son not only how to cook, but also to preserve the integrity of food and the culture it is placed into.
