Capri's Hotel Caesar Augustus Announces New Executive Chef
With extensive experience at Michelin-starred Italian restaurants, Chef Vuolo oversees all dining operations at the historic Relais & Chateaux hotel, including signature restaurant La Terrazza de Lucullo, in-room dining, and banqueting and special events.

Vuolo joined Hotel Caesar Augustus from La Sponda at Hotel Le Sirenuse in Positano, where he served as Sous Chef for the past year. Previously he held a variety of positions, including Sous Chef at Michelin-starred Il Buco in Napoli; Chef di Partita at La Sponda at Le Sirenuse hotel in Salerno; and Commis at Don Alfonso 1890, a two Michelin star restaurant in Napoli. Vuolo began his career at Al Palazzo at the hotel Palazzo Murat in Salerno in 2002.

Chef Vuolo enjoys use of Hotel Caesar Augustus's on-site organic garden, employing a "Zero Mile" philosophy by using locally grown vegetables, fruits, herbs and spices. Each morning, guests can spot Vuolo foraging in the garden, developing menus based on the selection of the freshest and ripest produce of the day. Sample dishes include: Buffalo mozzarella with tomato & basil sauce; I Ravioli alla Caprese (ravioli filled w/fresh caciotta cheese) and Le polpette di melanzane con salsa "sciuè sciuè" (eggplant balls and fresh tomato sauce). While Vuolo experiments in the kitchen, hotel guests sunning by the pool are offered tastes of his daily inspiration.

Chef Vuolo studied at Istituto Alberghiero Raffaele Viviani and currently resides on the Isle of Capri. When he's not in the kitchen, Chef Vuolo enjoys gardening, and has his own herb garden and olive grove in his backyard.
