Clayoquot Wilderness Resort Appoints New Executive Chef
Justin brings impressive credentials and a wealth of international experience to the position from his work on five-star cruise liners, luxury hotels, Jamie Oliver's Fifteen in Melbourne, The Wedgewood Hotel in Vancouver and as Chef de Cuisine at the trend-setting Atlantic Group in Australia.

“As a chef trained at three-star Michelin restaurants in Europe, the dining experience at our hotel is near and dear to my heart,” said Gary Bedell, general manager, Clayoquot Wilderness Resort. “Justin impressed me with his passion, spirit of innovation and tremendous creativity. He has the talent and drive to take our cuisine to world-class levels. Dining is by far the most important activity at our property from the perspective of time spent by our guests and their vacation experience couldn't be in better hands.”

When the resort opens in May 2016, Justin and his dynamic team will inaugurate the new restaurant, The Bedwell Bistro, nestled on the shore of Bedwell Sound featuring inspired cuisine, breathtaking panoramic views and an ecologically driven architecture and decor that reflects the resort's rustic glamour. The Bedwell Bistro, along with the original Cookhouse will feature an exciting new menu that not only renders homage to local specialties, but also incorporates a degree of inventiveness and imagination that promises to alter the culinary experience in the Pacific Northwest. As executive chef, Justin is an integral part of the new management team charged with shepherding the resort to unparalleled levels of excellence and guest satisfaction. Clayoquot Wilderness Resort embraces the Great West pioneering spirit and is bucking for international status as the top wilderness luxury experience on the planet.
