Martineau and his team are based onboard and travel the various routes including the latest ‘Chronicles of South-East Asia' launched in 2011. This trio of rail voyages operates alongside the train's existing year-round schedule of classic departures between Bangkok and Singapore and vice versa. The itineraries have been specially crafted to offer unique, enriching and in-depth travel experiences by allowing guests to immerse themselves in the panorama and culture of these fascinating countries, and to discover new locations.

Martineau's ambition is to mirror the journey through his menus.

He regularly travels throughout Asia to continually expand his knowledge of the region's cultural cuisines, evident through his distinctive approach and ability to expertly create synergy between eastern and western flavours.

"All my dishes are uniquely created to reflect the exquisite and exotic flavours of South-East Asia," says Martineau.

He is also adept at creating gourmet experiences for even the most discerning of traveller having worked on the legendary Venice Simplon-Orient-Express train and the Road To Mandalay river cruise in Myanmar prior to joining Eastern & Oriental Express in 2007. His previous experience has made him skilful at creating Haute Cuisine in an extremely tight space; the fully-equipped professional kitchen onboard is one of the smallest in the world.

Whether on one of the classic journeys, or the exclusive 6-night Chronicles' journeys, including ‘Epic Thailand' and ‘Fables of the Hills', dining onboard promises to immerse guests in a thoroughly authentic cultural and culinary voyage.

Whilst travelling through Thailand diners can enjoy the chef's signature Tom Yam Cappuccino (a heady mix of Kaffir lime leaf, galangal, lemongrass and chilli), at the same time as absorbing the constantly changing, breathtaking scenery such as the historic Isan Plains and the culture-rich city of Chiang Mai - a new view with every bite.

A guest's dining experience is heightened by the beautiful restaurant cars: Adisorn, Malaya and Rosaline. Decorated with wall panels of skilfully engraved marquetry, the Adisorn and Malaya restaurant cars feature elm panels and light wood design inlays, while the Rosaline takes inspiration from a Chinese theme, featuring rosewood and decorative lacquered panels, hand painted with delicate flowers. For an authentic dining ambience, distinctive chinaware, silver cutlery and fine crystalware are used.

Finally, travelers can enjoy an evening sunset view with a pre or post-dinner cocktail in either the Bar Car, with its resident pianist, or the Observation Deck with its tropical veranda ambience.
