Nemacolin Woodlands Resort Appoints New Executive Chef
As Executive Chef, Eckman will oversee dining operations, management of over 200 associates and mastermind the resort's award-winning Restaurant Collection's menu creation, which includes the Forbes Five-Star, AAA Five-Diamond Lautrec Restaurant (pictured above), one of only 25 restaurants in the world to hold such awards simultaneously.

Chef Eckman has devoted the majority of his career to making Nemacolin known throughout the culinary world for fine dining and unexpected menu combinations. He began his profession with the resort in 2008 as the Chef de Cuisine of Aqueous, Nemacolin's AAA Four-Diamond upscale steakhouse restaurant located in the AAA Five-Diamond boutique hotel, Falling Rock. In 2010, Chef Eckman's culinary expertise was expanded when he accepted the position of Executive Sous Chef of Fine Dining at Nemacolin, focusing on the resort's four fine dining restaurants, Lautrec, Aqueous, Autumn and Sunset Terrace. From this position, Chef Eckman was able to formulate his own vision for dining excellence, which he can now bring to life.

A native of Pennsylvania, Chef Eckman graduated from Indiana County Technology Center's culinary program in 2000 and with Honors at Indiana University of Pennsylvania's Academy of Culinary Arts. Eckman's resume also includes a completed externship at the Breakers Hotel, then a Mobil Five-Star, AAA Five-Diamond Hotel, and was the only extern to be hired at L'Escalier, a fine dining restaurant on the resort's property.
With accolades from Forbes Travel Guide, AAA and Wine Spectator Magazine, Nemacolin attracts epicureans from across the country. Nemacolin's Restaurant Collection consists of 15 options including four fine dining restaurants, nine casual outlets and multiple seasonal operations and lounges. The resort's extensive wine program features the Académie du Vin, a state-of-the-art wine tasting room, and the largest wine cellar in the state, storing up to 27,000 bottles at any given time. In July of 2014, the resort opened the Holistic Gardens featuring over 50 produce and herb varieties, and the beginnings of a vineyard. The resort also works exclusively with over 16 local farms, Community Supported Agriculture (CSA) programs and the local Pennsylvania Amish community.
