"It's not easy to introduce a signature culinary style without being viewed as pretentious, especially when there is a strong traditional cuisine as a base. I take pleasure in the art of cooking and pushing the boundaries, and furthermore, I want to offer guests a variety to choose from," says Chef Gagnaire. "Although I respect the products found in this region, I enjoy using them in my own style, reintroducing flavors and marrying tradition with new creations. Culinary arts are the love above all."

The ambiance contributes to an exceptional experience at Pierre Gagnaire for Les Airelles. The layout and décor echoes the world of Empress Elisabeth of Austria, best known as "Sissi." There is delicacy and refinement found throughout the dining room featuring sensuous silks and 19th century inspired furniture, armchairs designed by Olivier Gagniere, Saint-Louis chandeliers and crystal glassware, Puiforcat silverware, and Hermes tableware adorn the restaurant. As Pierre Gagnaire is a lover of contemporary art, he chose to display the works of artists such as Francoise Petrovitch and Cédric Teisseire that complement the Chef’s unique culinary creations.
