Rome's Il Palazzetto Hotel, Restaurant & Wine Bar Welcomes New Executive Chef
With international training beginning in Spain - which included cooking for the Spanish royal family at the Real Club Náutico in Mallorca - Chef Stefoni's experience includes working at the Michelin-starred Hostaria dell'Orso in Rome and at restaurants in Venice and Los Angeles.

While his principal inspiration is rooted in his native Italian cuisine, Chef Stefoni incorporates Spanish and Mediterranean flavors and techniques, and puts an emphasis on simplicity in order to bring out the true flavors of each ingredient.

Chef Stefoni recently launched new spring lunch and dinner menus at Il Palazzetto, featuring inventive dishes such as tagliolini pasta in cacio cheese and black pepper sauce with zucchini blossoms and a liquorice root-flavored cod fillet with Jerusalem artichoke and lima beans, and, for dessert, pistachio crème brûlée.

Il Palazzetto Hotel, Restaurant & Wine Bar presents a fusion of Neo-classical and contemporary-chic décor, Il Palazzetto was acquired in 1999 by Roberto E. Wirth, President & Managing Director of the adjacent, five-star Hotel Hassler Roma. After three years of renovations, the property officially opened in 2002.
