Scarfes Bar at Rosewood London Debuts New Cocktail Menu 'From Scratch'

Scarfes Bar at Rosewood London has unveiled its latest cocktail menu ‘From Scratch’ launching on 8th April, returning to the fundamental principles of mixology to explore the essential DNA of the classics enhanced with the inimitable Scarfes Bar flare. The menu, which features 22 original creations, has drawn inspiration from the deep history and exalted traditions of cocktails with the addition of considered flavor, innovative technique and, above all, an unerring sense of fun.

Building on the success of their tenth anniversary last year and being awarded No.41 on the list of The World’s 50 Best Bars 2023 in Singapore; Martin Siska, Yann Bouvignies and the talented team at Scarfes Bar are taking things ‘back to basics’ looking to elevate the classics whilst revisiting renowned favorites such as tropical and savory cocktails, whilst bringing back the theatre of cocktail shaking. The new menu will also incorporate the mixology team’s very own home-made cordials, ferments and distillates which are created in their laboratory, which they use within all their cocktails and menus at the bar.

Tropical flavors are represented in this menu with classics, such as Scarfes Bar’s twist on the Garibaldi, Tropicaldi is a refreshing mix of Campari, fluffy orange, blended pineapple and strawberries producing a delicious barbie-pink drink garnished with strawberry leather created in-house. Another fruity twist on this menu is Figgy Star, with Renais gin, banana and fig, Mio Saké and Co2, garnished with a cardamom leaf. Well balanced with slightly sweet notes singing through.

Savory flavours shine through in Gibson Please, a mix of Grey Goose, Noilly Prat, Cubeb Pepper, apple, pickles and garnished with a homemade pickled onion. Garden Smash, a blend of Hendrick’s, basil, elderflower and Peach Wine is a savoury and herbaceous serve with complimentary sweet notes. Smoky Maria is a blend of Patron Silver, Tio Pepe, Marmite, smoked clamato, garnished with a delicate caper olive leaf. Gimlet on the Vine is a savory classic gimlet, Bombay Sapphire, evaporated Black Krim Tomato, raspberry and caper.

Agave aficionados can find true delight with Rosa Paloma, a long, refreshing and sherbet-y blend of Komos Rose, fig leaf, Palo Cortado and London Essence Pink Grapefruit Soda, garnished with lychee. Whilst Lost Marguerite will bring a spicy kick, with Lost Explorer Espadin, Grand Marnier LA, hot mango and kaffir lime, garnished with a slice of fresh pineapple sprinkled with Espelette Pepper.

Renowned for its extensive whisky cabinet, Scarfes Bar’s Knock on Wood is created with The Macallan 12, cedarwood, acorn and Martini Ambrato, garnished with eucalyptus. No.7, a blend of The Lakes Whisky Makers Reserve No.7, Palo Santo, Oloroso Sherry and fortified mint with rich and woody notes. Pear Highball is a lighter and longer serve, with The Glen Grant 12, clarified pear, muscat wine, Co2 and garnished with a dot of blackcurrant jelly and a pear chip made in-house. Whilst the playfully named Call Me Nutty, is a rich blend of Michter’s Rye, Roasted Hazelnuts, tonka, cedro and PX.

Often overlooked, Scarfes Bar has also revisited beloved historical favorites like the White Lady, originally created in 1919 in Ciro’s Club in London, Spring Lady is a floral and spring-like twist on the classic, a blend of No.3 gin, St-Germain Long Pepper and Acacia Hydrosol and Jasmin Muyu. Whilst Ramos & Eve, Scarfes’ edition of the Ramos Gin Fizz, which was originally created in New Orleans in 1888, is a richer and more indulgent agave cocktail, with Espolon Blanco, pandan, acorn, coconut cream, pineapple soda and garnished with a sprinkle of matcha powder. A more recent classic from 2008, is New York’s famous Paper Plane, Paper Glider is a blend of Highland Park 12, Aperol, and peach and maple Verjus.

Following the bar’s tenth anniversary celebrations world tour which saw the team visit ten of the best bars in the most renowned cities across the globe, Siska and the team will continue their travels whilst also bringing bars from across the world back to London.
