Scottdale's Prado Restaurant Announces New Chef de Cuisine
As the head chef of the resort's signature AAA Four Diamond restaurant, DeRuvo will continue Prado's commitment to working with local farmers and purveyors to bring the freshest and best of ingredients straight from the farm to the table, while prepared with the authenticity, elegant simplicity and international flair for which DeRuvo is so well-known.

"As my first major contribution to Prado since arriving here last month, I am extremely proud of the tapas menu and so excited to share it with our regulars and hopefully introduce it to some new guests as well," said Chef Peter. "This menu is a clear reflection of what I like to cook and what people can expect to eat when they dine here. Simply put, we serve good food, made with the best, seasonal ingredients, influenced by flavors and cooking techniques from around the world."

In addition to his 20 years experience and lauded talent for preparing authentic and simplistic yet elegant cuisine, DeRuvo brings to his role at Prado a deep passion and appreciation for olive oil, the restaurant's most cherished and widely-used ingredient (as celebrated by the large, antique olive oil jars that greet guests on either side of the restaurant's main entrance). He attributes his keen knowledge in this area to the time he spent in Tuscany tending to the olive groves at Montecastelli, a famous importer of Italian wines, olive oils and balsamic vinegars.

Before joining Prado, DeRuvo served for three years as the executive chef of Sassi, where he was instrumental in helping the Scottsdale restaurant earn its fourth diamond. Other Valley experience includes Capital Grill, Gregory's World Bistro, Rancho Pinot and Marquesa. He has also worked for such nationally-acclaimed restaurants as James Beard Award-winning Al Forno in Rhode Island and Oliveto in Oakland, California. DeRuvo graduated from Johnson & Wales in Providence, RI where he earned his associate's degree in Culinary Arts.
