Ever evolving, the entire culinary program at the hotel is now set to offer an extensive range of innovative new gastronomic experiences; kicking off with a newly unveiled menu at The Restaurant.

Under the leadership and expertise of award-winning Executive Chef Jonathan Wright, The Restaurant invites diners to experience true craftsmanship, quality and passion, all showcased and prepared in an open theatre kitchen. Drawing inspiration from the seasons and its relationship to farmers, growers and fisherman, the new menu concentrates on sourcing the finest seasonal ingredients available, many of which are locally farmed or fished.

An expert team of specialty chefs from Singapore, Thailand, China, India and Indonesia have been gathered to carry out this vision, each possessing years of training, cultural experiences, and recipes that have been handed down from generation to generation.

Classic and modern techniques are combined to create authentic dishes that are both rich in history and flavor. A series of family-style dishes are then presented in the form of: Appetizers, Dim Sum, Soups, Curries, Tandoor dishes, Noodles, Seafood, Meat and Poultry.

Signature house favorites such as the Crispy Peking Duck, Whole Dungeness Black Pepper Crab and Tandoor Baked Leg of Lamb are offered alongside fresh Steamed Mussels with Lemon Grass, Thai Green Curry with Hearts of Palm, and homemade Ramen with Slow Poached Egg.

Introduced specially for the summer anniversary, The Restaurant also introduces a Three Course "Summer at The Setai" Pre-Fix Menu, which is a weekly changing menu featuring a number of Chefs Specialties. The menu awakens the palate with freshly baked Indian Nan Bread, Indonesian Fish Crackers and fresh Achars and Pickles, followed by an Amuse Bouche. The menu will include choice of three appetizers, entrees and desserts, and is priced at USD50.

Dwayne Savoie, The Setai's well-versed Sommelier, has also contributed to the summer menu and fifth anniversary celebration with 'Bottleshock", which features 60 hand selected wines from around the world, all of which have a score over 90 points from Wine Spectator. These chosen wines are offered at 40 percent off the regular selling point and is offered in addition to The Setai's world-class wine list.
