Recipient of the 2012 International Hotel Award for small hotels (fewer than 50 rooms) in Indonesia, CasCades is the perfect milieu for groups of any sort, particularly since the cuisine is well matched by the finest in gracious and professional Balinese service.

A few delectables from the current menu: fresh poached local prawns with avocado salad, Marie rosé sauce, and greens with lemon oil; pan seared French duck liver with exotic Balinese fruits in a red wine grape reduction; Soto Ayam (Indonesian chicken noodle soup); German cucumber slices with a cider vinegar, dill, and shallot dressing on romaine lettuce; and “Are you game?” (cocoa braised rabbit pastie in a reduced port sauce and baby quail in a toffee apple raspberry sauce with pumpkin and minted pea puree and straw potatoes). Desserts, of course, are to die for ... chocolate brûlée with sour cherry sauce and homemade vanilla ice cream ... espresso chocolate fondant with chocolate salami and coconut sorbet in a port wine reduction ... and five French cheeses served with dried Muscatels, pear, and Lavash.

Guests should consider scheduling their stays so that they can experience one of the monthly Full Moon Dinner & Dance events. Each is a two-hour performance that begins at 7:00 p.m. during which diners are treated to dramatic Balinese dance performed by a celebrated local dance troupe while enjoying a Balinese Rijsttafel (tasting menu) or selections from the à la carte menu.
