With his starters, entremets, main courses and deserts Mauro Buffo will take his guests on a trip through different regions. His range of themed menus will reflect the astounding versatility of Buffo's talents and his personal style, while at the same time paying homage to the Vigiljoch and its breathtaking panorama.

Buffo's guiding principle in conceptualising these set menus is what might be called a thematic cross-linking of the individual courses. To the classic harmonious sequence of courses he adds yet another dimension: conceptional aspects designed to further enhance the suspense factor. His selection of ingredients and cooking techniques gives rise to a wide range of possibilities that result from the interplay of geographic coordinates with regional and international influences, creating a most intriguing basis for infusing a restaurant like the 1500 with a new form of dynamism and developing a new kind of dramaturgy.

Mauro Buffo wants to take his guests on a culinary journey that starts at the Vigiljoch mountain. This first themed menu sets the scene for a series of highly original interpretations of the culinary culture of vigilius mountain resort. Following the course of the water from the mountain stream to the banks of the Isarco, Adige and Po rivers, we end up in the Lagoon of Venice at the border of the Mediterranean. Each of the stops on the way is devoted to another set of select products and how they are used, so that the very sequence of courses adds a note of surprise to the culinary delight offered.

Thus, the trout stands for the icy-cold mountain streams that flow into the Adige and Isarco rivers, while beef cheek represents Bozen/Bolzano and Vialone Nano rice Verona. Marine fish symbolise Chioggia, candied fruit and coffee stand for Venice.

To go with these set menus, the mountain resort's cellar will offer wines that form a pleasurable and exciting accompaniment to the culinary excursion, as they are judiciously chosen to round off the dishes with which they are served while at the same time paying heed to their origin. This intimate relationship confronts the gourmet with a delightful range of contrasts and individual accents: the wines add inspiration to the culinary interpretations of the individual stations of the journey down from the heights of the South Tyrolean mountains.

Mauro Buffo has been the Restaurant's new chef since the summer of 2010. Born in Verona, he has spent the last few years working in outstanding restaurants all over the world. In the course of his career he has proved his skill at numerous three-star restaurants such as Massimo Alajmo's Le Calandre or Ferran Adria's El Bulli. Having gathered experience in many places in Europe, he ventured out across the Atlantic to spend a few years studying culinary trends in New York. His last stop before taking over the Restaurant 1500 at vigilius mountain resort was the Falai in New York.

His debut at the Restaurant 1500 in June 2010 marked the beginning of a new era in a region high above the Adige valley. Since then, the gastronomic globetrotter has given ample proof of the mastery with which he freely and imaginatively draws on diverse contemporary influences, skilfully creating subtle culinary links between current international trends and a modern version of South Tyrolean cuisine that will surely delight and surprise even the most sophisticated connoisseur.
