Caldera House, the American West’s premier retreat is partnering with Chef Enrique Olvera and his partner Santiago Pérez to bring the renowned Chef’s modern Mexican cuisine to the 8-suite luxury hotel and Alpine Club in Jackson Hole, Wyoming this winter. Chef Olvera and his exceptional team are the talents behind Cosme & Atla in New York, Pujol in Mexico City, and the newly debuted Damian in Los Angeles. Since their debuts, each of the restaurants have become among the most coveted reservations, with Pujol and Cosme both recognized among the top restaurants in the globe on the prestigious World’s 50 Best Restaurants list. Chef Enrique Olvera is known worldwide for creating dishes that are rooted in Mexican tradition and techniques while being modern in their approach. Pujol, Chef Olvera’s first restaurant, launched in Mexico City in 2000. Driving global recognition, Pujol is characterized by an attention to detail and the imaginative, ongoing exploration of ingredient combinations and a mastery of both traditional and contemporary techniques. Chef Olvera entered the US culinary scene in 2014 with Cosme in New York City, which has since received countless accolades, establishing itself as one of the most buzzed about restaurants in Manhattan. Dishes at Cosme are rooted in Mexican flavors and traditions while celebrating local and seasonal ingredients from the Hudson Valley and surrounding region. Atla opened three years later in New York. The casual all-day eatery in the heart of downtown NoHo offers a menu that is at once simple and inventive, with a focus on organic, sustainable, and seasonal ingredients. In addition to Pujol, Cosme & Atla, Chef Olvera has thoughtfully launched an exceptional portfolio of restaurants. Most recently, he and his business partner Santiago Perez launched Damian, their first Los Angeles project. Since its debut, Caldera House has been committed to delivering exclusive and remarkable seasonal experiences. Following last winter’s collaboration with Chef Masayoshi Takayama, Caldera House is thrilled to debut a new culinary pop-up with Chef Enrique Olvera. Taking place from January 7th-9th, 2022, guests and locals alike will be invited to book a multi-course tasting menu for up to 12 guests with Chef Olvera in one of Caldera House’s luxurious 4-bedroom suites. The bespoke menu will highlight the best of Chef Olvera’s restaurants from the Mexican fonda staples at Atla to the simple yet elegant dishes of Cosme. Chef Olvera will also be joined by Cosme’s Chef de Cuisine, Gustavo Garnica, and Sous-Chef, Luis Lares, who will tailor the menu according to guests’ preferences, with the option to add mezcal pairings. Chef Olvera and his team will also take over Southcable Café to offer an après taqueria and mezcal experience.
