Rosewood Baha Mar is celebrating Bahamian history with a new afternoon tea menu created by recently appointed Executive Pastry Chef Chamila Prasad Munasinghe. In honor of the nation’s 50th year of independence this year, Prasad presents a delectable tea menu incorporating the nation’s history, heritage, and sense of place into every bite.
Set in Rosewood’s elegant Library lounge, afternoon tea is served with a variety of savory and sweet creations. The sweet temptations incorporate Yellow Elder, the national flower of The Bahamas; smoked salmon and lobster, an ode to the vibrant Caribbean Sea; and various fruits perfectly ripened by the mild Bahamian climate. All the beloved favorites are freshly prepared and gracefully served, including scones with clotted cream and jams, finger sandwiches, and pastries.
Savory bites include lobster and avocado on toasted brioche, smoked salmon and chive cream cheese on whole wheat bread, and cucumber & cheese sandwiches, while sweet temptations include pistachio & raspberry macarons, yellow elder with elderflower jelly, vanilla mousse, and rocher, caramel profiteroles with chocolate and sabayon, pineapple & rum bavarois with coconut dacquoise, and a choice of tea or coffee.
To round out the culinary engagement, the afternoon tea experience also offers the chance to try local bush teas and tea-based cocktails. With a collection of over 30 loose-leaf teas, including healing Bahamian teas that can cure almost any ailment, guests can embark on a restorative journey from the comfort of the inviting lounge.
Afternoon tea is available in The Library on Thursdays, Fridays, and Saturdays, or upon request for $70 per person, exclusive of tax and service charge.
