Hotel Jerome, Auberge Resorts Collection announced the exclusive preview of PABÚ helmed by the esteemed Chef Coco Montes at  Prospect, one of the resort's dining destinations. Available from July 20-22, and in partnership with The Residences at Shell Bay, Auberge Resorts Collection, guests will be amongst the first to experience a taste of the master chef’s new concept.

Through his unparalleled artistry, Chef Coco will take guests on a gastronomic journey through an exquisite menu, immersed in a symphony of tastes and textures. Meticulously curated to highlight the finest seasonal ingredients, each dish infuses a touch of Mediterranean refinement and is inspired by South Florida’s most exclusive new private enclave.

After honing his skills at numerous Michelin-awarded restaurants worldwide, PABÚ is Chef Coco’s first solo project. His new restaurant concept will focus on exceptionally fresh ingredients that go in and out with the seasons, accented by a touch of Mediterranean elegance.

The six-course menu at Prospect will highlight fresh summer ingredients from the Roaring Fork Valley, including a multicolored tomato gazpacho, halibut in a shallot escabeche and a slowly grilled rack of lamb, each expertly matched with an optional wine pairing that features an exquisite La Grande Dame 2015 Vintage.
