An ode to transformation and time, the collection unfolds in three elemental movements: Awaken, Ember and Stillness, mirroring the rhythm of nature and the human spirit. Within each group, the cocktails guide the palate through shifts in energy and mood, from uplifting freshness to bold complexity and tranquil indulgence. Crafted by our Mixologist Le Ngoc An, who brings surity and dedication to his craft, each drink features a signature balance of globally renowned cocktail techniques and local Vietnamese touches. An believes a cocktail is never just a drink, it is a moment suspended in time, where aroma, taste and emotion converge.
Awaken, the first movement, offers more than just refreshment, it’s an invitation to feel alive, to open the senses and the mind. This sequence is ideal for the curious and inspired, those seeking a light beginning. The journey begins with Agate, a herbaceous composition made from sous-vide Green Chartreuse infused with thirty distinct botanicals clarified through filter paper that removes solids, resulting in a herbaceous, dry and elegant drink. As conversation begins to unfold, Emerald follows with pandan-washed rum and hazelnut, lifted by tonic fizz, as a fresh, tropical echo. Malachite, layered with cucumber syrup, basil foam and clarified citrus, offers notes of both familiarity and surprise, like a whisper of Vietnamese gardens in bloom. Closing the set, Beryl lends toasted floral elegance, to the air, and is perfect for guests who prefer subtlety, grace and clarity in their cocktails
From first impressions to deeper encounters, the collection then moves into the second movement, Ember, a chapter made for connection, contemplation and intrigue. Rutile makes a smoky entrance: Tequila and Ardbeg whisky with Agave Nectar and a shimmering smoke bubble for an instant conversation-starter. Coral, with its umami-laced blend of Bacon Vodka, Clarified Tomato Juice, Crafted Chili Oil and Sea Salt, evokes both nostalgia and bold newness, striking a chord with epicureans and adventurers alike. As the evening deepens, Brown Jasper offers a comforting close, Vietnamese Coffee Foam resting atop White Cacao and Belvedere Vodka, the perfect companion for long stories, quiet reflections or intimate moments.
And when the night calls for stillness, the third movement awaits, a liquid exhale. Stillness is designed for guests who seek calm, elegance and introspection. Jade the bar’s namesake, blends White Cacao, Manotsuru Junmai Sake Dry and a delicate Matcha Coconut Foam, offering creamy complexity with a refined umami soul. Heliodor adds brightness with Crafted Infused Banana Flor De Cana, Elder Flower, ideal for guests easing into nightfall or relishing the final rays by the sea. Finally, Zircon is a quiet triumph of balance, Gin Tanqueray, Dry Vermouth and Cointreau, mixed with Campari. It’s the kind of drink that speaks of gentle confidence and lingers long after the glass is empty.
At the heart of this ten-cocktail collection lies a thoughtful dialogue between classic cocktails and innovation. “Each cocktail is rooted in a meaningful story often cultural or elemental then reinterpreted with forward-thinking mixology,” highlights Vaibhav Karnwal, Beverages Manager, whose experience in luxury hospitality encompasses working in Indian Ocean destinations such as the Maldives and Seychelles and Montenegro, prior to him joining Regent Phu Quoc. Drawing inspiration from gemstone symbolism and regional heritage, ingredients such as pandan, Vietnamese coffee, lemongrass, and matcha are elevated through modern techniques such as clarification, fat-washing, and sous-vide fermentation.
More than flavour alone, the visual and textural experience is central. “We use techniques like edible garnishes like green edible rice paper, vegetable caviar or foam infusions to create an interactive, almost meditative drinking experience,” he notes. Each element from the glassware to the colour palette, has been designed not only to delight the senses, but to reflect the mood of each stone, whether grounding, awakening, or contemplative.
