The iconic Hôtel de Crillon, A Rosewood Hotel reintroduces its one-Michelin star restaurant, L’Ecrin to debut a new concept that flips the traditional approach to wine pairing on its head. In contrast to the customary tasting menu, the new L’Ecrin experience revolves around guests’ choice of beverage vs. food. Guided by the hotel’s Head Sommelier, Xavier Thuizat, diners select the wines they would like to explore and the optimal number of courses for their evening (options are 3, 5 or 8), which Xavier then takes back to the Chef, Boris Campanella, and the Pastry Chef, Matthieu Carlin, to together curate a selection of highly seasonal dinner pairings. From white truffles and Reine des reinettes (King of the Pippins) apples, to autumn game which honors the classic, French way of life, each pairing is tailor-made and influenced by the region’s unique offerings.

From the 22nd of September, L’Ecrin - the fine-dining restaurant at Hôtel de Crillon - is offering guests a brand-new tasting experience. Wines now set the tone and diners are invited to discover a unique sensory experience, along with the art of French service and a tailor-made menu... a novel way for the mythical Parisian luxury hotel to celebrate gastronomy underpinned by its expertise and search for excellence.

Tailor-made menus and pooling of talents

Hôtel de Crillon is innovating and focusing on pairing wine and food, turning it into a true art form. In a move away from standard menus, in this new experience, the Head Sommelier, Xavier Thuizat, will help diners choose the wines and number of courses before working together with the Chef, Boris Campanella, and the Pastry Chef, Matthieu Carlin, to create a perfect match. Each menu is therefore unique as it will vary according to the wines selected.

It is a gastronomic experience that relies on a truly harmonious combination of two great skill sets. Each recipe is designed to suit a particular type of wine, with a special emphasis on a highly seasonal menu. With the greatest of care, the chef selects premium seasonal produce, ranging from the rare to the commonplace. The autumn menu of Boris Campanella is primarily celebrating game, white truffles and Reine des reinettes (King of the Pippins) apples, paying homage to producers scrupulously selected for their passion and exceptional knowledge.

A non-alcoholic version of this gastronomic experience promises to be just as tasty. Also based on seasonality, the menu will be composed of a series of eight courses based around teas, specialty coffees and tisanes.

L'Ecrin also offers the French-style of table service. Each evening, the team will provide diners with a spectacular dining experience which includes opening vintage bottles of port with hot tongs, serving Tokaji Eszcencia wine in a spoon and pouring sherry in the style of a Venenciador (a traditional Spanish expert wine pourer).

Hôtel de Crillon continues to surprise its guests and L'Ecrin restaurant truly showcases the fine-dining experience, thus perpetuating the great tradition of the French way of life.
