Rosewood San Miguel de Allende, a property that showcases its surrounding UNESCO World Heritage site, has launched a new restaurant model that celebrates Mexico’s diverse regions and shared heritage by platforming the innovative culture of modern Mexico and ancestral culinary techniques that connect generations. Pirules Garden Kitchen is driven by a purpose to enrich the lives of the people it touches—from the supply chain to the guest and beyond—while ensuring the preservation of the environment and culture that makes San Miguel de Allende such a precious destination.

A first-of-its-kind in San Miguel de Allende, Pirules Garden Kitchen aims to set the standard for restaurants in the region. With a strong focus on supporting local partners and producers—such as La Factoria, a pioneering dairy farm that uses genetic analysis to create casein-free products; Traspatio, a local initiative empowering women by helping them raise and distribute chickens; and Comepescal, a key protector of Mexico’s fish species—the menu highlights the individuals and businesses that contribute to the larger community and drive innovation in the gastronomic and farming industries. These partnerships not only allow the restaurant to give back to the local community, but also enable patrons to directly support these efforts, becoming part of a shared mission to nurture the surrounding ecosystem while enjoying a groundbreaking culinary experience.

Chef Odin Rocha, who returns to the hotel after a five-year hiatus, is also championing a zero-waste philosophy and striving to become Latin America's first plastic-free establishment. “As chefs we cannot change the world,” said Chef Rocha. “But we can change the kitchens around the world, and that will make an impact.”

Aligned with the principles of Rosewood Impacts, a roadmap for Rosewood Hotel Group to deliver positive impact on all its communities and the planet, the restaurant sources all products locally, with nearly 80% from within a 60-mile radius. Guided by Chef Rocha, the menu reflects his deep passion for and connection to San Miguel de Allende. It showcases seasonal ingredients alongside both ancestral and global preservation techniques, such as fermentation, with a focus on full-circle sustainability—utilizing ingredients multiple times as needed, whether in the dishes, beverages, or throughout the concept. Rather than focusing on a specific cuisine, Pirules Garden Kitchen embraces a culinary philosophy that prioritizes creativity and technique while honoring the region's natural roots. Chef Rocha’s approach not only showcases the region's finest offerings but also immerses guests in local flavors, creating a dining experience that is deeply connected to its surroundings. The opening of Pirules Garden Kitchen also aligns with the growing trend of culinary travel, appealing to guests eager to explore destinations through their vibrant food cultures and techniques.

With community at the heart of the luxury hotel and restaurant, Pirules Garden Kitchen provides livelihoods for residents by hiring from the surrounding communities. The restaurant will also feature a public market, showcasing a curated selection of freshly cut flowers, herbs from the hotel’s gardens, local fruits and vegetables, honey and jams made in-house, along with other artisanal goods sourced from local producers and purveyors.

Surrounded by lush greenery and anchored by a majestic Pirules tree, the multi-level restaurant features both indoor and outdoor seating, an open-concept kitchen, a communal wood table, and a spacious bar area. With designs led by acclaimed Cuaik Arquitectos Studio, which draws inspiration from the vibrant energy of the city, the restaurant's architecture, colors, materials, and furnishings reflect authentic Mexican craftsmanship and the cultural essence of the destination, in line with Rosewood’s guiding A Sense of PlaceÒ philosophy. The space is adorned with local materials, including slate stone, fired brick, recycled wood, custom-made ironwork, clay tiles, and more, all thoughtfully chosen for their timeless quality. Key design elements throughout the space pay homage to Mexican heritage, featuring a custom Huichol mirror—handcrafted by a local artisan in collaboration with Casa Midy, marking the largest Huichol art piece ever created in their workshop—alongside traditional ceramics and woodwork by renowned Mexican artist Daniel Orozco.

With his return to Rosewood San Miguel de Allende, Chef Rocha seamlessly blends his culinary skills with a deep passion for celebrating the finest ingredients, traditional preservation techniques, and rich cultural immersion to bring Pirules Garden Kitchen to life.

A standout feature of the kitchen is its oven, visible from every angle of the restaurant, where 80% of the dishes are traditionally cooked over ash, wood, or charcoal. Signature menu items will include Cured Patzcuaro Lake Salmon Trout Salad, Seasonal Harvest Barbacoa, Grilled Stripe Bass, Wagyu Cheek Creamy Rice, Whole Roasted Cauliflower, and more.
