Scrub Island Resort Offers All-New, Organic Garden Enhancing Culinary Offerings

Guests dining at Scrub Island Resort, Spa & Marina, a private-island resort in the British Virgin Islands, are now enjoying fresh, all-organic herbs, fruits and vegetables harvested from the resort’s own garden, planted earlier this year.

The resort’s executive chef is incorporating items from the garden in various dishes served at the property’s various dining outlets, including the signature Cardamom & Co. restaurant. For example, freshly picked basil was recently used to make more than eight pounds of pesto used in pasta dishes, Caprese salad, and other culinary creations.

Garden items not used by the chef are available for purchase in the market at the Outpost by overnight guests and island-hopping visitors. 

Currently, the garden is growing tomatoes, green beans, snow peas, eggplant, pumpkin, chili peppers, spinach, squash, onions, spring onions, basil, dill, rosemary, cilantro, mint, and parsley.  Three lime and orange trees each have also been planted, with plans for an addition 40 fruit trees.
