The Ritz-Carlton Grand Cayman has opened Saint June, the latest culinary experience located at the world-renowned Seven Mile Beach resort known globally for its exceptional culinary offerings. Inspired by the vibrant and rich culture of the island, the seaside bar and restaurant is located steps from the sand and features panoramic ocean views and a casual alfresco atmosphere with cocktails and light fares.

Saint June joins six distinct culinary venues available at The Ritz-Carlton, Grand Cayman, including fine AAA Five-Diamond restaurant, Blue by Eric Ripert, Seven steakhouse, Japanese cuisine at Taikun, Italian fare at Andiamo and the newly reimagined Silver Palm. With an atmosphere of barefoot elegance, Saint June strikes a balance between casual dining and luxury service. The restaurant offers guests the option of dining under a shaded open air terrace, a beautiful beach deck located directly on Seven Mile Beach or at the Ophelia Bar, noteworthy for drawing inspiration from the rich, local culture for its unique theme and offerings.

Refined, beautiful furniture and custom banquettes, an all white pergola and bar and surrounding lush tropical landscape set the scene for memorable sunsets and beachfront dining, with the best seat for sunset along the Seven Mile Beach stretch. Signature dishes feature local flavors, like Jerk Chicken with local mango slaw and Cayman Style Snapper along with South American inspired creations, like Beef Empanadas in true Argentinian style, Churrasco Steak, and a very unique take on Mexican Esquites. Dishes are offered alongside creative cocktails, including the Tourist Tree, named after local botanicals; Chic and Skinny with delightful infusions of mezcal and local flavors along with other artful creations that expertly blend local flavors with spirits like mezcal, gin and vodka.

Situated on Grand Cayman’s best sunset vantage point, Saint June will open Ophelia Bar, at dusk, featuring a sleek, metal palm leaf chandelier above the intimate bar alongside decorative sconces and surrounded by rich landscape sets the scene for a hidden oasis from the pool deck for guests to enjoy unobstructed sunset views. Responding to the ever-changing ocean vista, the satellite bar will serve signature cocktails such as the vibrant Lady Loren with Patron Silver Tequila, Chartreuse, Dry Vermouth, Lemon and Strawberry Oleo, as well as, the smoky Barbarella with Los Vecinos del Campo Mezcal, Giffard’s Orange Liqueur, Pineapple Cordial, Jalapeno Mint Agave and Lime. The beverage menu will also offer an array of spiritless cocktails, wine, champagne and beer.

Chef Frederic Morineau is the Executive Chef of The Ritz-Carlton, Grand Cayman and has presided in the kitchens of some of Europe and the Caribbean’s finest four and five star dining establishments. As Executive Chef since 2008, he has overseen many Ritz-Carlton premium culinary divisions including those of The Ritz-Carlton, Buckhead in Atlanta, The Ritz-Carlton Sarasota in Florida and now in Grand Cayman, where he has won numerous service and leadership accolades. In 2011, he was invited into the ranks of one of the most prestigious associations of chefs in the world: the Maîtres Cuisiniers de France. Chef Frederic is known for organizing Grand Cayman’s most revered culinary event, Cayman Cookout, alongside Chef Eric Ripert.
