From Anima, the hotel’s signature restaurant, to the verdant Garden courtyard and The Roof, an open-air destination with panoramic city views, The Rome EDITION celebrates summer through cuisine, cocktails, and curated experiences. Highlights include daily Botanical Alchemy aperitivo sessions in the Garden, and two exclusive Caviar Giaveri tasting events at The Roof on August 27 and September 17.
ANIMA — A Contemporary Take on Roman & Neapolitan Traditions
Located on the ground floor, Anima showcases the culinary vision of Executive Chef Antonio Gentile, who blends his Neapolitan roots with his Roman culinary training. The menu offers a refined journey through memory and creativity, featuring standout dishes such as the Spaghettone “Benedetto Cavalieri” with tomato and basil, Eggplant Parmigiana, Friggitelli and Cetara anchovies pasta, Beans and Mussels, Catch of the Day with zucchini scapece and seafood sauce, and a reimagined Neapolitan Pastiera.
Anima is open daily from 12:00 PM to 11:00 PM.
GARDEN — Botanical Alchemy with Hendrick’s Gin and The Circle
The experience continues in the restaurant’s lush courtyard, the Garden, a true sanctuary of biodiversity and nature. Here, in collaboration with Hendrick’s Gin and The Circle, guests can enjoy Botanical Alchemy every day: an aperitivo that harmonizes perfectly with its surroundings. Gin takes center stage in a sensory journey of aromas and flavours, enhanced by a curated selection of herbs. The offering includes four exclusive cocktails made with iconic Hendrick’s Gin in its Original, Oasium, Orbium, and Grand Cabaret expressions.
Each drink is paired with a botanical garnish by The Circle, Europe’s largest aquaponic farm, an edible bouquet of fresh leaves and flowers grown with meticulous attention to sustainability and quality. This combination amplifies the organoleptic profile of each cocktail and creates a dialogue with the space in which it's served. Completing the experience are gourmet bites created by Executive Chef Antonio Gentile, designed to elevate the tasting experience in a simple, natural way.
THE ROOF — Grilled Delicacies, Signature Cocktails & Skyline Views
On the top floor, The Roof is the hotel’s panoramic rooftop bar and restaurant, offering breathtaking views of Rome’s skyline, from the Pantheon to the Fontana dell’Acqua Paola. With a travertine pool and chic ambiance, it’s the ideal location for a poolside lunch, sunset aperitivo, or al fresco dinner under the stars.
The menu celebrates the art of grilling with dishes such as Charcoal-Grilled Octopus Skewers with New Potatoes, Red Prawn Catalana, and the Cowboy Steak, as well as light options like Raw Catch with Tomato and Wild Fennel and a Beef Tartare with 32-month-aged Parmigiano Reggiano and Hazelnuts.
