The St. Regis Cap Cana Resort, the brand’s first resort in the Dominican Republic set to open in April 2025, introduces Nina Restaurant, its signature dining destination from award-winning Peruvian Chef Diego Muñoz of World’s 50 Best Restaurant fame, who brings more than 20 years of global culinary expertise to the St. Regis. The restaurant is a re-interpretation of tradition, using ingredients that tell a story of heritage and craftsmanship, creating a dining atmosphere that is both authentic and contemporary.
CULINARY
Rooted in the Americas, Nina Restaurant combines Latin-inspired cuisine with global flavors, showcasing Chef Muñoz’s imaginative and worldly approach. His experience helming acclaimed global establishments, such as Popular in New York City and 1111 Peruvian Bistro in Miami, have influenced Nina Restaurant’s extensive menu to showcase a fusion of bold flavors and sophisticated preparations. Fire takes center stage at Nina Restaurant, a name translated from “ember,” “candle,” or “fire” in Quechua, the indigenous language spoken in the Andean region of South America. Whether sizzling on the grill or elegantly chilled, every dish is crafted from the highest-quality, thoughtfully sourced ingredients from across the continents to create a unique culinary experience.
Guests can start with delicate snacks like Tomato Carpaccio, Crispy Jumbo Prawn Tails, and Mussel and Clam Escabeche. Appetizers include refined options like Hamachi Tiradito and Riand Roasted Strawberry Agnolotti paired with grilled king crab. For mains, selections range from the succulent Aged Turbot on the Coals to the Salt Baked Celeriac enhanced with fermented pineapple and rocoto butter; with signature grilled items and premium cuts such as Wagyu Rib Eye, New Zealand Grass-Fed Lamb Cutlets, and Kurobuta Double Bone Pork Chop, all complemented by house-made Béarnaise and chimichurri sauces. Completing the experience, highlights from the dessert selection include Lemon Pie with coffee and meringue and Chocolate Éclair with raspberry and pistachio filling.
BEVERAGE
On the beverage side, Nina Restaurant features an expansive bar with handcrafted, balanced cocktails created to infuse history and local ingredients with the beauty and nature of the island, featuring sustainably house-made fruit vinegars, local Mama Juana liquors, and traditional Pisco-based creations. The bar further enhances Nina Restaurant’s culinary journey with a curated selection of reimagined classic cocktails, offering a modern, elevated twist on traditional favorites.
