As the season of renewal begins, The Edgewater Hotel—the city’s only over-water hotel and a landmark destination for over half a century—ushers in a new era with a property refresh designed to enhance the guest experience while staying true to the hotel’s rich history and signature Pacific Northwest style. Coinciding with the revitalization of Seattle’s waterfront, the illustrious hotel introduces significant landscaping upgrades, refined interior design direction within guest rooms and designated public spaces, a renewed culinary experience at the hotel’s beloved Six Seven restaurant, and new offerings at The Brim, the hotel’s on-site coffee and retail shop.

In conjunction with the city’s extensive waterfront revitalization project, The Edgewater debuts thoughtfully redesigned landscaping that reflects the natural beauty of the Pacific Northwest and complements the hotel’s idyllic waterfront setting. Ornamental Karl Foerster grass, a tall, natural sea grass, frames the entirety of the property, offering an aesthetic partition from street view. Upon arrival on Pier 67, guests are welcomed by tall Aspen trees, as well as maple and birch trees, while an assortment of ferns, flowers, and other seasonal greenery embellish the exterior, creating an organic and immersive experience. Considering the hotel’s central, urban location, these natural enhancements reflect the outdoorsy appeal of the greater Seattle area.

Inside the hotel, guest rooms and select public areas are elevated with contemporary décor, state-of-the-art equipment, and a modernized look and feel, while staying true to The Edgewater’s quintessential nature-driven design with a musical edge. The lobby and 67 Lounge feature all new brown saddle leather couches and brown leather dining chairs, black boucle and green velvet lounge chairs, and industrial wood and metal tables to enhance comfort while reinforcing the hotel’s signature Pacific Northwest aesthetic. Additionally, the fitness center has been outfitted with premium equipment, including a Peloton rower, Precor treadmill and elliptical, and an expanded weight collection, for an improved wellness offering. Guest rooms have also been refurbished with refreshed finishes and new décor elements intended to evoke a sense of laid-back luxury. Premium linens by Italian heritage brand Frette, updated drapery and throw pillows, and the addition of an oriental area rug as well as Adirondack lounge chairs and modern side table beside the in-room fireplaces foster a more residential and inviting ambiance. As a nod to the hotel’s deep-rooted ties to Seattle’s storied music scene, guest rooms also showcase original photography by acclaimed artist Karen Mason Blair, whose work captures portraits of legendary artists from the 80’s and 90’s.

The Edgewater’s culinary revamp comes from within Six Seven Restaurant, the legendary over-water dining destination serving Pacific Northwest cuisine, which will launch new and expanded dinner and brunch menus on May 1. In addition to long-time favorites and seafood staples, the iconic restaurant will debut ‘Simply Prepared’ and ‘Iced Seafood’ sections on its dinner menu, featuring an elevated selection of premium fish and meat plates served with a choice of sauce and one side dish and PNW Oysters, Jumbo Prawns, Tuna Tartar, Dungeness Crab and Smoked Salmon & Blinis platters, respectively. Other new dishes include the Spicy Tuna Tacos, Lobster Corn Bisque, and Alaskan King Crab Legs, among many others. Similarly, the brunch menu will add a variety of soon-to-be signature items, from the Brulee’d Ruby Grapefruit and Smoked Salmon Scramble to Sesame Seared Tune Poke Bowl and Korean Chicken Sandwich. Guests will also be able imbibe on inventive seasonal cocktail offerings while taking in the panoramic views of the Elliott Bay and the Olympic Mountains.

Extending beyond the restaurant, The Edgewater’s on-property boutique and coffee outpost, The Brim, features a renewed vision under the talented direction of newly appointed General Manager Kennedy Morgan, a seasoned food and beverage professional with more than a decade of industry experience. Under her tutelage, The Brim is redefining the typical coffee shop experience by offering a highly-curated experience that blends premier coffee with locally, sourced products, while honoring the rich cultural history rooted at The Edgewater. It will continue serving coffee and provisions, but look to expand its offerings with a curated selection of wines and additional programming.

The Edgewater’s design and culinary updates are the first of many anticipated happenings at the longstanding establishment in 2025, such as the ongoing Sound Waves concert series, the spirited Halloween and Christmas-themed pop-up bars, Seafair’s Torchlight Parade and Weekend Festival, and much more.
