Available currently in three flavors: light and divine classic Chocolate, bright citrus-spiked Grand Marnier, and a seasonal Black Currant that is equal parts floral, fruity, and tart, they arrive dramatically risen, golden at the edges, and collapse with theatrical flair at the first spoonful. Light as air yet full of flavor, they strike a perfect balance between delicacy and indulgence. The mastermind behind these confections is Executive Pastry Chef, Matthew R. Lambie, who brings a world-class pedigree to the Majorelle pastry kitchen. Lambie has honed his craft at culinary institutions including The Plaza Hotel, La Grenouille, and Harrods London, developing a style that is equal parts technical precision and creative finesse. At Majorelle, his focus overall is refined patisserie and plated desserts that blend classic French influences with contemporary elegance, each creation a quiet nod to his exacting standards and polished sensibility. His soufflés, in particular, are a stand out for their meticulous technique – from sourcing organic, seasonal ingredients to achieving the perfect soft peak in his meringue, no detail is overlooked:

• Organic milk and premium vanilla beans form the base for a rich, aromatic pastry cream
• Room-temperature, carefully separated eggs ensure optimal texture and rise
• Egg whites are whisked to soft, glossy peaks, then gently folded to preserve airiness
• Ramekins are prepared with upward strokes of butter to support maximum lift
