Anima, The Rome Edition’s signature restaurant unveils its new tasting menu, 227 KM, reflecting the essence of its culinary identity. In addition, the restaurant also introduces a vegetarian tasting menu, alongside a lighter, more flexible set menu, allowing guests to curate their own experience.

The new 227 KM menu at Anima strengthens its culinary vision further - a cuisine born from the dialogue between Rome and Naples. The new menu is even more conscious with a core focus on the ingredients, and the search for small-scale producers, and a precise geography stretching across the coastal towns of Gaeta, Formia, Terracina, and Anzio, all the way to the Capital. At its core is the authenticity of raw ingredients, seasonality, and a meticulous selection of small farmers and outstanding producers from Lazio and Campania.

It is not merely a geographical route, but a cultural and emotional one: a dialogue between traditions, gestures and flavours that meet, converse and enrich one another. It is a story that begins with Neapolitan memory and arrives at Roman balance and elegance, reinforcing the restaurant’s identity in a decisive and personal way,” Antonio Gentile, Executive Chef at Anima.

The 227 kilometers separating Naples from Rome becomes a six-course culinary narrative, opening with a Neapolitan-inspired appetiser and closing with a dessert symbolic of Roman tradition, “Ricotta and Sour Cherries,” created by Pastry Chef Giulia Zarattini together with Chef Gentile. Along the journey, often-overlooked yet exquisite ingredients take center stage, such as Terracina red prawns, Formia provolone, and tender baby squid, showcasing a cuisine that honours the territory’s richness far beyond the usual clichés.

Among the standout dishes are “Like a Ragù Meatball” featuring beef tartare, Neapolitan ragù, Parmigiano, and pine nuts; “Baby Squid ‘Vota-Piatto’ Style with Puttanesca Sauce”; “Spaghetti with Garlic, Oil, Chili, and Raw Terracina Prawn”, highlighting that excellence extends beyond Mazara; “Tortelli filled with IGP Lamb Genovese and Formia Provolone”; and culminating with “Sea Bass Baked in Parchment with its Broth and Potatoes.” Even the amuse-bouche becomes an essential part of the narrative. The dinner begins like the start of a day - a symbolic breakfast between Naples and Rome, reimagined. Guests are presented with a surprising “cappuccino” of potato foam, accompanied by a mini sfogliatella filled with mozzarella and tomato, and a mini maritozzo stuffed with cacio e pepe cream. Playful yet refined, this gesture introduces diners to Anima’s universe from the very first bite.

Equally fundamental is the careful selection of suppliers: the eggs are from “Galline Felici” in the Castelli Romani area, the Piennolo tomatoes are from Mount Vesuvius by “Orto Vulcanico” in Ercolano, each ingredient contributes to building an authentic and coherent narrative.

Alongside the 227 KM menu, Anima presents a fully vegetarian tasting menu with the same identity-driven philosophy through the richness and creativity of the vegetable world. Priced at €80, key dishes include the “EDITION Eggplant Parmigiana,” “Risotto with Artichoke ‘alla matticella’ - a reinterpretation of traditional ember cooking, and marinated egg yolk,” and “Galline Felici Eggs, Formia Provolone and Cardoncello Mushroom.”

Completing the offering is a third option, the “Km of Your Choice” menu (€85), lighter and more flexible: four courses selected freely from the à la carte menu (one starter, one first course, one main course and one dessert), for a personalised and dynamic experience.

The winter à la carte menu, remains available until the end of March 2026, and complements the new tasting journeys, a menu that is now broader, more refined, and distinctive. Starters include “Roasted Squid, Potatoes, Mussels and Turnip Greens,” a tribute to coastal cooking. The first courses include “GENTILE Candela with Tuna Genovese,” a seafood reinterpretation of a great Neapolitan classic; “SOMMATI Cacio e Pepe Linguine with Marinated Terracina Prawn,” blending Roman tradition with the sea of the Pontine coast; and “Tortelli filled with IGP Lamb Genovese and Formia Provolone,” a perfect synthesis of Lazio and Campania. Main courses include “Roasted Lamb and Nocerino Spring Onion Cooked Under Ash” and “Roasted Meagre with Neapolitan-Style Sautéed Escarole.” Hero plates from the dessert menu include “A Take on Neapolitan Pastiera with Pear and SOMMATI Pecorino” and the renowned “EDITION Tiramisù.”.
