Fairmont Le Château Frontenac has appointed Gabriel Molleur-Langevin as new chef of Champlain restaurant. This new talent within the Fairmont family brings a wealth of experience from award-winning restaurants around the world to the role of chef at the Champlain under Frédéric Cyr, Culinary Director of Fairmont Le Château Frontenac.

After a remarkable stint as executive chef at Le Mousso in Montreal, where he has worked for the past five years, Gabriel views this step as the next great destination in his life's culinary journey. With over 15 years of experience in internationally renowned establishments, Gabriel has worked in Michelin-starred restaurants and in exceptional properties affiliated with Relais & Châteaux and Grandes Tables du Monde. He has worked with the Michelin 3-star restaurant Les Maisons Marcon in France, the incomparable Noma in Denmark, named the world's best restaurant for several years, and the unique Fäviken in Sweden, renowned for its locavore-inspired cuisine. He firmly believes that Quebec City will be the next culinary capital of Canada thanks to the incredible local food producers in the region.

A VISION INSPIRED BY A RICH HISTORY
Gabriel Molleur-Langevin quickly developed a keen interest in cooking and haute gastronomy, with a strong desire to explore and push the limits of culinary techniques acquired through his experiences. Comparing cooking to art, Chef Molleur-Langevin says that “each ingredient can be shaped into a new reference in a rich library of flavors in constant evolution. In this sense, the fine dining menu appears as a canvas that translates a taste composition”. The food will be at the heart of the process: its taste, its essence, and the techniques used to enhance it. “Behind each menu, what is essential for me is teamwork. When a dish is prepared in the kitchen with cohesion and collaborative thinking, you can see and feel it in the dining room. A fun environment, a spirit of sharing, and a passion for cooking are what I want to convey in my menus”, he explains.

The Culinary Director of Fairmont Le Château Frontenac, Frédéric Cyr, is delighted to have Gabriel join his team. “For the Champlain, we were looking for a chef with a unique background, a strong personality, the latest expertise, and a passion for creating a unique and personal experience. Gabriel offers us all of this and more”. Throughout his rich career, Gabriel has learned to master fermentation, to understand the particularities of the seasonality of products in order to emphasize the best flavors throughout the year, and to develop one-of-a-kind dining experiences.

QUEBEC CITY: THE COUNTRY'S NEXT CULINARY CAPITAL
Originally from Quebec City, Gabriel settled at Champlain restaurant after many years of travel throughout Canada, the United States, Europe, and Asia, which have infused his culinary talents with a distinctive signature. Gabriel's arrival in Quebec City will be marked by a first menu this spring inspired by wonder. “When people arrive in places as beautiful and steeped in history as Fairmont Le Château Frontenac and Champlain, they feel a sense of awe and their eyes light up! This is the feeling that I want to bring to the plate,” says Gabriel Molleur-Langevin. Developed with local ingredients, this new culinary offer will be unveiled at the end of May in a 5 or 8 course discovery menu.
