The Mayan-inspired menu begins with an amuse-bouche of Black Mission Gigs, Infused Vanilla Lobster Medallions and a Medley of Three ceviches followed by a Cream of Winter Squash Soup on Duck Confit and an Iced Chaya Shot with Fresh Lemon Sorbet. The main course presents guests with the option of Slow Roasted Mayan Spiced Beef Tenderloin, Crispy Seared Sea Bass and Chipotle Lobster Tail or Baby Pumpkin Puree with Baked Panela Cheese and Poblano-Chile-Polenta Cake.
