Aurora Anguilla Resort & Golf Club, a new property set to debut this December will shape the future of the island. Aurora Anguilla embodies a new vision under the ownership of Olympus Ventures and will offer a soulful sense of place honoring the rich culture of the island, its natural splendor and the traditions and personalities that make it so special. The property promises transformational experiences, complete with world-class amenities, which, in addition to the culinary destinations overseen by Chef Bissell, include an 18-hole Greg Norman Signature Design championship golf course, Sorana Spa, access to exclusive private planes, and more.

Set to be the Caribbean’s premier culinary destination, Aurora Anguilla Resort & Golf Club will offer a unique sense of place with menus informed by the magnificent surroundings of the island. Tucked in the center of the resort, Kitchen Table will act as a gathering place, where visitors will enjoy fresh-baked goods, artisanal flatbreads, offerings from the garden, and more. Out by the water on the white sands of Rendezvous Bay, Eventide will blend the Anguillan culture, Caribbean flavors, and the oceans sea life to create a sophisticated dining experience. Enjoy the carefree nature at Breezes, where iconic favorites, such as lobster rolls and fish tacos, will be met with refreshing tiki-inspired cocktails and live music on the weekends. Morella will showcase handmade pastas and elegant crudos. D Richard’s, perfectly positioned within Aurora International Golf Club, will offer guests a place to unwind and refuel between rounds of golf, serving timeless chophouse classics in the evening, with an extensive wine list.

Defining moments are found in the details of the food and beverage offerings. Located on property, the Hydroponic Farm will provide Chef Abram and his team with a broad range of herbs, vegetables, and fruits, inspiring them each morning with the daily harvest. Prioritizing quality, Chef Abram has also developed a relationship with local fisherman, promising the best catch-of-the-day fare. The world-class culinary team alongside Chef Abram will include Brandon Laterveer, formerly of Eleven Madison park and the NoMad Bar, New York,  and Executive Pastry Chef Rebeca Isbell, who will bring her experience from some of Manhattan’s finest restaurants including Betony, Italienne, and Eleven Madison Park to the pastry and dessert program at Aurora Anguilla. Accompanying the dynamic culinary team is a collection of highly respected partners including Jeffrey Tascarella, who is responsible for the concept development, pre-opening operations, and the eventual launch of the resort’s food & beverage program with the goal of introducing a best-in-class culinaryexperience. Aurora Anguilla is the first large-scale project for Jeffrey’s newly formed hospitality consulting and management company.
