Festive Culinary Delights
Guests of the resort can look forward to extravagant holiday dining experiences enhanced by inviting après-ski offerings at the property's on-site dining outlets, Brass Bear Bar and 8100 Mountainside Bar and Grill. Just in time for ski season, the resort has welcomed Executive Chef Jonah Friedmann to lead culinary operations on property. A 2022 "Rising Star Chef" award recipient, Chef Friedmann emphasizes seasonal, locally sourced ingredients, which are evident in his après-ski snacks like charcuterie with a bacon fat candle and oversized pretzels with truffle parmesan fries, along with fondues made from local Colorado lager.

Located in the hotel lobby, Brass Bear Bar features a grand fireplace, elegant seating, and a delicious selection of cocktails and bites, all framed by floor-to-ceiling windows that provide sweeping views of the mountainside. Holiday menu highlights include Foie-Stuffed Beignets with red wine and blood orange onion jam; Beef Tartare Sliders with yuzu compressed apple, sweet soy, and scallion; and more.

At 8100 Mountainside Bar & Grill, Thanksgiving, and Christmas dinner will showcase classic holiday dishes alongside unique culinary creations, from Applewood Smoked Turkey and Coconut Squash Soup to Wagyu Prime Rib, a scallop station, Butternut Ravioli, and more. Guests can also indulge in a selection of decadent holiday desserts, including Mini Yule Logs, Sweet Potato Crème Caramel, Christmas Croquembouche, and Pecan Praline Mont Blanc. The season will culminate in a grand New Year's Eve dinner set against the glowing mountainside illuminated by the village’s holiday lights.
