Inn at Dos Brisas Announces Newly Expanded Organic Farm
Now sitting on 42-acres of Texas Hill Country, the expansion nearly doubles the ranch resort’s agricultural footprint to support its award-winning pitchfork-to-plate culinary offerings and experiences.

“Over the years, I’ve had the honor of working alongside and learning best practices from a variety of farmers with different specialties from greenhouse growing to micros growing to outside tomato farming” states Lisa Roese, the general manager of the farm at The Inn. “I’m thrilled to bring this knowledge to life with the Inn at Dos Brisas’ lush organic farm and to provide the resort’s Executive Chef Zachary Ladwig the freshest ingredients to craft authentic farm-to-table meals for guests.”

Divided into 19 acres dedicated to row crop production and 23 acres dedicated to hay production, the Inn’s organic farm coupled with its 7,000 square foot greenhouse harvests over 400 different varieties of herbs, fruits, and vegetables, 80 percent of which are heirloom. Currently, the farm is harvesting peppers, tomatoes, melons, squash, okra, strawberries, garlic, onions, leeks, cucumbers, carrots, cilantro, heirloom tomatoes and pumpkins. With this produce, Chef Ladwig crafts new daily menus that are 100 percent garden-centric, highlighting the purity and simplicity of the season’s finest fruits and vegetables.

Texan born agriculturist Roese, collaborates with Chef Ladwig to plan and harvest year round produce that delivers an enchanted and elevated culinary experience for guests including chef table offerings, cooking classes and intimate dinners artfully tailored to diners’ preferred palates. Guests can also participate in an authentic farm-to-table experience. With a basket in hand, visitors tour the farm, learn the origin of its produce and pick fresh items to cook in a private class led by Chef Ladwig, during which he explains the culinary practices of the time honored "Texan" way of preparing and cooking meals over open fire-also known as a "cowboy cauldron."

Situated on 313 acres in the southern foothills of Texas Hill Country, The Inn at Dos Brisas is an idyllic ranch resort that evokes the spirit of a private Spanish manor. Featuring nine intimate haciendas and casitas, the ranch resort accommodates up to 28 guests.
