Sedona's Enchantment Resort Unveils New Restaurants and Clubhouse
All establishments located in the newly renovated clubhouse offer distinctly different but equally fresh approaches to upscale dining at Enchantment, providing unexpected options for resort guests and enticing new dining adventures for residents of Sedona and Arizona. Communal tables, cozy booths and intimate corners, all with breathtaking views of the red rocks, provide ideal settings for group gatherings, family dinners, business meetings and special dates.

With doors just opening in April 2012, the restaurants and bars are quickly gaining reputations as local gathering spots for epicureans and wine aficionados alike. Executive Chef David Schmidt, who took the helm in spring of 2012, is expanding the property's devotion to farm-to-table practices as well as integrating seasonally-driven menus. Accumulating over 20 years of professional culinary experience to date, he is undisputedly armed with skills and devotion that help create a unique culinary experience for guests.

"We are excited to offer guests and our Sedona neighbors many new and truly stellar dining experiences," said Myra deGersdorff, general manager of Enchantment Resort. "The expansive renovations at Enchantment have allowed us to employ a completely fresh approach and avant-garde look in all regards. We anticipate Che-Ah- Chi, the Wine Bar, View 180 and Tii Gavo with its new bar becoming integral parts of the community."

The new and enhanced dining options include:
• Che–Ah–Chi, the resort's new signature restaurant fittingly named for what the Apaches called Boynton Canyon, sets the stage for a memorable evening where the food lives up to the views. With a split-level dining layout showcasing scenic panoramas from an elevated setting, the finely appointed wood finishes, tile, and custom lighting create a space that is contemporary and quietly seductive. Six intimate banquettes provide some of the best vantage points to watch the sunset, while solid quartered oak dining tables and leather seating throughout make every seat a destination. At night, the ceiling glows with hand-blown chiseled glass shards that cascade a celestial magic over the restaurant. Accommodating approximately 114 guests, the versatility of the restaurant allows for outdoor as well as indoor seating.

The restaurant serves contemporary American cuisine with a hint of Southwest influence and is paired with a wine list that earned Wine Spectator's "Best of Award of Excellence." Open for breakfast and dinner, Che-Ah-Chi offers a well-appointed menu of classic dishes enhanced with a local flair. At breakfast, an American style buffet offers eggs, fruit, pastries and more, while made-to-order options include a variety of frittatas, waffles, and omelets. For dinner, the innovative menu features a diverse selection of local and regional ingredients with specialties such as Heirloom Beet salad, Sea Scallops in candied bacon relish, Duck in creamy polenta with root vegetables, Filet Mignon with grilled ramps and sweetbread ragout, and Elk Loin with fava bean hash.

• The Wine Bar, Enchantment's stylish new bar, visually displays a wine cabinet with over 2,000 bottles. Overlooking the Sedona red rocks, this new venue is a fantastic spot to unwind and soak up the resort's relaxing ambience over a glass of wine or to enjoy a casual dinner while taking in Sedona's unsurpassed surroundings. The focal point of the Wine Bar is the twenty-foot-long signature communal "gathering" table made of solid iron with a three inch Sandstone top, which is set majestically beneath amber and earth-colored blown glass custom light fixtures, creating a one-of-a-kind dining experience.

• Ideal for tapas and cocktails, dinner or dessert, View 180 is a sophisticated and vibrant gathering place for relaxing and unwinding after a long day of seeing the sights or attending meetings. In the morning, the multi-functional space provides the ideal locale to enjoy a hot cup of coffee over the paper, while at night it transforms into an energetic bar and lounge. With sliding glass doors that open to a verandah, this unique indoor/outdoor setting is available starting at 2 PM for hand-crafted cocktails, award-winning wine, and a tapas-style menu featuring a wide variety of choices for a prelude to dinner, or a sophisticated option for a light dinner.

In View 180, a massive fireplace, with signature cast hematite Native American scribed tile, and standing iron seamed flue takes you to another place. Arranged for conversational-style seating, the down-filled heathered linen sofas and mid-century wingbacks in vintage cigar-laden chestnut leather bring a reminiscence of the rustic southwest.

• Perfect for a casual dining experience or a place to unwind over drinks and a picture perfect sunset, Tii Gavo has been refreshed and launched just in time for the summer season. While the restaurant still serves inspired southwestern fare, it features an indoor fireplace as well as a blend of seating styles of a traditional restaurant and lounge. Beyond the fireplace is an intimate bar for enjoying the state's largest selection of Arizona wines, as well as regionally-crafted beers on tap, specialty cocktails and margaritas, including the signature Prickly Pear margarita. The new focal point of Tii Gavo is the exterior circular patio and fire pit, where guests can relax by the warmth of an outdoor fireplace with striking views of the resort and the stunning red rock surroundings.

Che-Ah-Chi is open daily for breakfast from 6:30 AM to 11 AM and serves dinner from 5:30 PM to 9:30 PM and Sunday Brunch 10:30 AM – 2:30 PM. The Wine Bar is open from 5 pm to close nightly.
