New Sustainable Brunch in Partnership with Slow Food Rome

This summer will see the return of Rome Cavalieri’s famous Sunday Brunch and, for the first time, will be curated in partnership with Slow Food Rome, a well-known Italian association with over 30 years experience in the protection and knowledge of biodiversity and importance of local food cultures and traditions, for its new S'BRUNCH Sunday series.
Through 2021 Rome Cavalieri will host a rich calendar of brunch menu themes reflecting history, tradition, and sustainability, all of which have been carefully curated by the Uliveto team and Slow Food Rome. In support of small businesses, each menu item is created by working with and choosing local producers and raw ingredients. Even more, an expert from Slow Food Rome will be participating in these brunches, where they will speak on what is behind the menu, the importance of supporting small businesses, and exhibiting some of their sustainable products for purchase. S’BRUNCH will take place on select Sundays, including July 4th and 25th and September 19th and 26th.

For total tranquility this summer, guests can enjoy a series of unforgettable outdoor spa treatments at the Cavalieri Grand Spa Club. Offered in a private, cozy cabana in the park, the chirping of birds, rustling of the leaves, and calming melodies of the water create the perfect natural soundtrack for all-round relaxation, during a high-end treatment of choice.

Rome Cavalieri offers guests the perfect spot to watch this summer’s major European Football Championships. Knights Sports Bar is a pop-up luxury viewing experience in the park created in collaboration with Heineken, where guests can watch the matches and drink freshly poured beer accompanied by a themed menu inspired by the cuisine of the city where each match takes place. Highlight matches and menus include the Belgium-Russia match accompanied with blinis and caviar, Spain-Sweden match serving Bolinhos de Bacalhau, and Croatia-England match where fish and chips will be offered.
Inspired by the gentle breeze of the Ponentino, Rome Cavalieri has created a gastronomic journey full of surprises. To begin their summer evening, tastemakers will be delighted with a new sushi and gin pairing experience at Tiepolo Terrace, offering fresh sushi perfectly paired with one of five iconic gins flavored with fragrances and herbs of their choice from the traveling Tiepolo Gin Trolley. Guests can dine at Uliveto, offering summer menus using locally sourced and seasonal ingredients, as well as a series of themed ‘capsule menus’ including a romantic seafood Moonlight Menu and the traditional Arabic Menu, which is a fixture of the hotel offered every summer.
