Chef Alléno, whose restaurant Alléno Paris in the Pavillon Ledoyen was awarded three Michelin stars in February, will direct all food & beverage services for the hotel, including the Bar du Faubourg and in-room dining.

Created by Parisian chef Yannick Alléno, STAY Paris le Faubourg is a restaurant with an authentic urban experience inspired by his travels, a place for discerning clientele who are curious for new adventures and gourmet destinations with an intriguing narrative.

STAY proposes a menu that thinks outside the box with cutting-edge and perfectly executed French cuisine, as well as dishes inspired by the chef's own travel experiences. From the “Café Beaubourg” fillet of beef with and matchstick fries to red chicken curry with cardamom rice or the monkfish cheek tagine, the dishes at STAY Paris embody enlightening journeys, and are invitations to discover the best of Paris.

With STAY, Yannick Alléno wanted to move away from the conventions of gastronomic restaurants by creating modern yet comforting fare. The resulting dishes, while reminiscent of Alléno's subtly elegant style, carry a healthy dose of creative liberty.

STAY Paris will retain the two STAY trademarks, the sharing table and the Pastry Library.

The sharing table welcomes adventurous groups who wish to share a warm and convivial moment. Seating six to eight people, it allows guests to socialise over a menu tailor-made especially for the table and accompanied by exceptional wines, offered indulgently in magnums.

The innovative Pastry Library will delight guests with its indulgent sweet treats. Guests are invited to choose their guilty pleasure through magnificent window displays which greet them as they enter the restaurant, a showcase for the head pastry chef's best-kept secrets. Among the temptations are the luscious hazelnut gavotte or banana croustillant with candied dates, each perfect with strong coffee. Each guest can put their own signature on their dessert by selecting the final ingredient to complete it.

STAY is not a long-distance affair, but a gourmet voyage for daring nomads, vagabonds and explorers, daring and hungry for travel. After Dubai, Taipei and Beijing, STAY Paris is opening its doors in the heart of the capital's haute couture district.

Yannick Alléno is also in charge of the Bar du Faubourg with an exquisite “Fil à Fil” menu, available for all-day dining. The highlight of the bar is a range of exclusive cocktails inspired by iconic fashion designers such as Jean-Paul Gaultier, Coco Chanel and Yves Saint-Laurent.

A citrus fruit cake “pin cushion” and “silk flowers” of crystallized sugar have also been created, in homage to the hotel's haute couture heritage. Whether you are enjoying breakfast, tea, room-service, the bar, a banquet or the STAY restaurant… each experience is a toast to the world of fashion.
