The St. Regis Venice Unveils New Menu at its’ Grand Canal Facing Restaurant, Gio’s

The St. Regis Venice, a spirited taste-maker on the Grand Canal, has unveiled the new concept at Gio’s, its signature dining venue. Comforting and creative in equal measure, the new à la carte and tasting menus explore the Italian gastronomic heritage by highlighting the strengths of its regional cuisines.

A pocket of waterfront tranquillity amid Venice’s bustling art scene, Gio’s is named after San Giorgio Maggiore—the culture-rich island across the Grand Canal, renowned for its dedication to preserving Italian heritage. On Gio’s new menu, Executive Chef Giuseppe Ricci, a proud Puglian who has called Veneto home for many years, draws inspiration from San Giorgio’s rich blend of cultural and artistic heritage to let the robust flavors of Puglia and the refined tastes of Veneto shine through juxtaposition. Under his guidance, hearty game pasta and delicate fish crudo come together to create a dining experience that is both comforting and refined.

The à la carte selection, available for lunch and dinner, opens with inventive appetisers that are followed by the primi piatti such as native cuttlefish with Troccoli pasta in walnut sauce or the spicy Monograin Mezzi Paccheri with blue lobster and anise bisque. Exploration of regional flavours then continues with the Garronese Veneta beef, Charcoal grilled octopus, Lagoon seabass in anchovy sauce and other mains.

Finally, a tight dessert selection ensures the final bite is as rich as what precedes it. Guests can choose from gin-infused brioche with lemon ganache and juniper gelato, dark chocolate souffle with almond gelato and pear compote, and other treats from the pasticceria.

Three tasting menus (from €120) provide the most comprehensive overview of Chef Ricci’s vision and are available for both lunch and dinner. Wine pairing can be requested separately.
