Waldorf Astoria Rabat Salé announces the official opening of its signature restaurant, Aldabaran, a world-class culinary destination helmed by the legendary chef, Alain Ducasse. Located on the 33rd floor of the Mohammed VI Tower, the restaurant brings together exceptional cuisine, thoughtful design and sweeping views from one of Morocco’s most iconic buildings.
“I’m honoured to be opening Aldabaran at Waldorf Astoria Rabat Salé,” comments Chef Ducasse. “From the outset, our partners’ ambitious vision was inspiring, and working once again with renowned interior designer Pierre-Yves Rochon has allowed us to create a space that delivers an exceptional dining experience, celebrating the flavours of the Mediterranean and the vibrancy of local Moroccan ingredients.”
Named after one of the brightest stars in the sky, Aldabaran pays homage to the history of Arab astronomers. Echoing the celestial motifs woven throughout Waldorf Astoria Rabat Salé, the restaurant blends Morocco's architectural heritage with contemporary culinary excellence.
A Contemporary Expression of the Mediterranean
At Aldabaran, Alain Ducasse presents a true tribute to the Mediterranean. Inspired by the French Riviera, the menu celebrates bright, elegant cuisine built around exceptional ingredients, seasonality and expertly mastered techniques. The restaurant has been developed in close collaboration with Alain Ducasse's team, who have played an integral role in shaping the menu, culinary operation and service philosophy, bringing the group's renowned standards and expertise to Rabat.
Serving breakfast, lunch and dinner, Aldabaran is one of the few restaurants within Alain Ducasse’s portfolio to offer a dedicated breakfast experience. Mornings unfold with homemade pastries, Alain Ducasse’s signature cookpot of eggs and mushrooms crowned with delicate shavings of Wagyu ham, and warm madeleines brought to the table in their individual moulds.
In the afternoon and evening, petit farcis, gambero rosso with ricotta tortellini, and lamb with caponata are among the dishes that highlight purity of flavour and harmony of ingredients. It is a generous style of gastronomy, where sophistication lies in the quality of the ingredients themselves.
That philosophy is reflected in Aldabaran’s approach to sourcing, which pairs Mediterranean inspiration with the finest ingredients from across Morocco. Chef Morgan Perrigaud works closely with local producers, including L’Agrumiste, whose orchard near Fès is home to more than 250 varieties of citrus - from bergamot and yuzu to rare lemons and mandarins - bringing distinctive flavours and aromas to the menu.
The same emphasis on terroir is reflected in the wine programme. Guests can explore the diversity of Morocco's vineyards through a selection that showcases the country's distinctive wine regions, alongside a curated collection of French labels, from iconic Bordeaux and Burgundy grand crus to niche producers from the Rhône and Loire valleys.
Moroccan Craftsmanship Meets Art Deco
Designed by Pierre-Yves Rochon, whose vision shaped both Waldorf Astoria Rabat Salé and Aldabaran, the restaurant combines contemporary interiors with references to Moroccan craftsmanship and Rabat's Art Deco heritage. Its curved design echoes the architecture of the Mohammed VI Tower, while floor-to-ceiling windows offer views across Rabat, Salé, the Bouregreg Valley and the Atlantic Ocean.
Throughout the space, traditional Moroccan craftsmanship is reflected in hand-crafted zellige, damascene-inspired detailing and pottery in black and gold tones. Art Deco influences are expressed through geometric forms, graphic detailing and black timber flooring with black-and-white accents
“Aldabaran will set a new benchmark for Rabat’s culinary scene,” said Guy Bertaud, general manager, Waldorf Astoria Rabat Salé. “With Chef Alain Ducasse’s expertise, Morgan Perrigaud’s leadership in the kitchen and a setting unlike any other in the city, the restaurant will add a compelling new dimension to the hotel and to Rabat as a luxury destination. We look forward to welcoming guests and the local community to experience it.”
Aldabaran is open for breakfast, lunch and dinner throughout the week. Reservations can be made via SevenRooms, by calling +212 5 30 48 20 20 or emailing rbart.restaurants@waldorfastoria.com
