Hotel Metropole Monte-Carlo announced its upcoming plans to debut a grand new restaurant concept this spring at the helm of Executive Chef Christophe Cussac, that will further position it as the most coveted culinary destination in the French Riviera. The independently-owned luxury five-star boutique hotel will soon invite guests and locals to indulge in a new fine dining experience reflective of its rich history, with a nod to its long visitation list of elite international clientele. The onsite Spa Metropole by Givenchy, one of three Givenchy spas in the world, has additionally welcomed new beauty and wellness experiences, and the hotel’s lobby has transformed into a whimsical botanical garden in anticipation of the spring travel season.

Elegance & Transparency for the Fine Dining Connoisseur

Chef Christophe Cussac’s soon-to-open restaurant, “Les Ambassadeurs by Christophe Cussac,” pays homage to the original “Les Ambassadeurs” restaurant that existed at Hotel Metropole Monte-Carlo in the 1920s. Following its opening in the 1920s, the original “Les Ambassadeurs” soon became an emblematic address of French gastronomy, particularly among the Monegasque and the hotel’s revolving list of noteworthy guests, from diplomats to aristocrats, that would walk through its doors.

Cussac’s new Les Ambassadeurs will serve elegant contemporary Mediterranean cuisine inspired by his own culinary heritage, and feature a “La Table du Chef,” or Chef’s Table, that will offer guests a spectacular 360-degree view of the Joël Robuchon-prodigy and his well-oiled team at work. Cussac’s open kitchen concept perfectly aligns with his culinary style based on authenticity and transparency. Dubbed the “Cussac Style,” his golden rule is “three flavors per dish” to respect the overall balance of each plate. Guests will find that all menu items reveal Cussac’s deep-rooted love and passion for the French terroir, charged by his ambition to provoke a delicate and rigorous emotion with each bite.

With its warm and modern interior designed by the acclaimed Jacques Garcia, Les Ambassadeurs by Christophe Cussac provides guests the option to sit at the counter or the main dining room, and will also feature an invite-only “backstage” area. Here, VIP guests will discover a striking all-glass wine cellar containing a variety of exceptional vintage bottles adjacent to a den of sweet treats at the helm of in-house Pastry Chef Patrick Mesiano, with sights of luminous and poetic ceiling artwork by art maestro Pierre Bonnefille. Guests will have the exclusive opportunity to speak to Chef Cussac and savor a selection of wine in this backstage area.

New Givenchy-Inspired Beauty & Wellness Experiences

The onsite “Spa Metropole by Givenchy,” one of three Givenchy spas in the world, is pleased to introduce two new seasonal experiences for its guests in celebration of the spring travel season. Inspired by the French luxury brand’s sophisticated and innovative approach to well-being, the spa has welcomed award-winning celebrity yoga coach Val Kahl to host her signature “Rebel Karma Yoga” weekly from now through May 15. Kahl’s approach to “Rebel Karma Yoga” is reflective of her wellness background in Los Angeles, and innovatively combines yoga sculpt with power yoga to promote self-confidence by encouraging guests to take or regain control of their mind and body, while simultaneously activating their dopamine and endorphin levels through movement. In addition to cardio, strengthening and stretching practices for the body, Vahl incorporates meditation to balance and stimulate the mind.

Beauty enthusiasts will be delighted to learn that Spa Metropole by Givenchy has also introduced an exclusive Makeup Masterclass led by beauty expert and creator of “Metropole Makeup” Joe Ghannam. Using all Givenchy products, Ghannam will share beauty secrets and advice tailored to each participating guest.

A Botanical Garden Awaits to Welcome the Spring

Hotel Metropole Monte-Carlo introduces a new signature “Mood,” or themes of whimsical and poetic expression and imagination across its grounds from the lobby to staff uniforms, during a particular season. The hotel’s current “Au Jardin d’Hiver” Mood, which guests will enjoy through the beginning of April, has transformed the lobby into a lush and dreamlike botanical garden combining exquisite crystals and plants, inspired by the Côte d'Azur to celebrate the mild Mediterranean winter and the upcoming spring season.
